Chilies are hugely used in Indian cuisine. My mother loves stuffing the big red chilies with spices and drying them up. These can be stored for over a year and are fried as and when needed. These stuffed and crispy chilies are directly consumed during the meals. Why? Because it is uncommon in India to have a whole meal without any use of spice.
Each state has a different method of using chilies. Some states use big green chilies, cover them in gram flour and then fry. These are made out of fresh chilies and can’t be stored and are less spicy due to no stuffing.
