Tea

Ask people what the most important drink in their culture is, and many will say ‘tea’.

Tea originally came from East Asia but has spread across the world, with distinctive varieties and ways of drinking tea becoming a point of pride for many countries – karkadeh from Egypt which is made bright red with rose flower buds; cha yen (‘iced tea’) made with condensed milk from Thailand; bright green matcha from Japan; and masala chai from India with cinnamon, nutmeg, cloves and ginger to make a distinctive smell and taste.

    When I was a child some members of my family were living in Libya and I clearly remember my aunt mentioning karkadè once when visiting our home in Italy. A few years ago I spent some time in Jakarta and a lady who lived near my flat gave me some dried hibiscus flowers to make a drink which I guess is like karkadè. It was a deep shade of red and aromatic and delicious. The hibiscus flower is called “rosella” in Bahasa Indonesia.
